Gippsland Jersey's cream is made without thickening agents and contains 35% to 45% milk fat depending on seasonality. It is beautiful, rich and has a slightly yellow colour to it. It is sweet in flavour and often has a cream crust, a result of the increased fat content of the Jersey milk.
