Upcycled Lemon Beenie is a zero-waste “culinary miso” - made by Wilder Foods in Coburg. First trialled with a bumper crop of lemons from Dave’s tree during lockdown, making a miso with the lemon peel meant that nothing was wasted. Wilder Foods have gone on to source peel from Market Juice, a local Melbourne business.
With 9 months maturation, any bitterness mellows and there’s a little fermented funk. Then there’s the umami – incredible length on the palate– a supercharged, citrussy seasoning product.
It’s simply a delicious and versatile plant-based stock. A tablespoon or two is all you need for soup – equally at home in a minestrone or a laksa. Or a delicious lemon and silverbeet risotto (recipe on FB group very soon!) Also great in curry pastes, dressings or in the base of home-made mayonnaise. Or tossed through pasta with roasted peppers, green beans and parsley – recipe to come too!
